Description

Ingredients

• butter, ghee or olive oil
• 2 eggs, fried sunny side up
• 2 100% corn tortillas
• salsa verde or tomatillo salsa
• 3 avocado slices
• queso fresco
• sea salt, freshly ground pepper

Directions

• Heat frying pan on high heat
• When hot, add butter, ghee or olive oil
• Turn heat to medium, add eggs to pan and allow to cook until whites are set and yolks are runny. Putting a lid over egg the last minute or so can help.
• While eggs cook, heat tortillas directly over flame on another burner
• Top tortillas with eggs, season with salt and pepper
• Add avocado slices
• Drizzle with salsa verde and sprinkle with queso fresco. Serve!
