Ingredients

  • 2 cups dried red lentils, rinsed and drained
  • 5 cups water
  • 4 cloves of garlic, pressed
  • ½ cup tahini
  • 2 tsp salt
  • 2 tsp ground coriander
  • 3 tbsp freshly squeezed lemon juice

Directions

  • Add your lentils and water to a large pot and bring it to a boil.
  • Once boiling, reduce the heat to low, cover and simmer for about 20 minutes or until most of the water has been absorbed.
  • Allow the lentils to cool slightly.
  • Add the lentils (no need to drain them unless there is a visible pool of water beneath them), pressed garlic, tahini, salt, coriander and freshly squeezed lemon juice to a food processor and process until smooth.
  • Refrigerate until ready to serve. Dip will thicken upon refrigeration.
