This is a recipe that can be made with homemade or store-bought sauce!

Ingredients

  • 4 lb whole chicken, insides removed
  • 1 lb broccoli, cut into florets
  • Salt and pepper
  • 1/4 tsp. crushed red pepper flakes
  • 1 tsp. vegetable oil
  • 3/4 cup chicken broth
  • 1 tbsp. tomato paste
  • 2 tbsp. soy sauce (you can use a GF version)
  • 2 tbsp. rice wine vinegar
  • 1 tsp. sesame oil
  • 3 tbsp. granulated sugar
  • 1 tbsp. cornstarch
  • 4 garlic cloves, minced
  • 1 tsp. freshly chopped ginger
  • Salt and pepper

Directions

  • Add vegetable oil to a small saucepan over medium heat. When hot, stir in garlic and ginger. Cook for 1 minute. Stir in tomato paste and cook for 30 seconds, stirring constantly. Add 1/2 cup broth, soy sauce, vinegar, sesame oil, sugar, salt, pepper, and crushed red pepper flakes if desired. Bring to a boil and simmer for a couple of minutes. Mix cornstarch with remaining broth and add to sauce. Simmer 3-4 minutes. Remove from heat.
  • Add chicken to 6-quart slow cooker. Season with salt, pepper, and chili flakes. Pour sauce over top of the chicken. Cover and cook for on low heat for 6-8 hours, or on high heat for 3-4 hours. In the last 30 minutes of cooking, add the broccoli.
  • Slice and serve over broccoli and/or rice!
