Ingredients

  • 3 cups shredded sharp cheddar cheese
  • 3/4 cup (6 ounces) shredded Gruyere cheese
  • 1 Tablespoon cornstarch
  • 1 1/4 cup German Lager, like a Erdinger Weisbier (reserve remaining beer)
  • 3 Tablespoons spicy German brown mustard
  • 2 Dashes of Hot Sauce
  • 1/4 teaspoon Worcestershire sauce
  • 4 pretzel rolls, cubed and lightly toasted
  • 1 pound German bratwurst or knockwursts (cooked), cut into 1/2” bites
  • 1 package cocktail sausages
  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 1 small jar German Gherkin pickles

Directions

  • In a large sauce pan, add beer and bring to a low boil over medium heat.
  • In a large mixing bowl, combine shredded cheeses and cornstarch.
  • Once beer is at a low rolling boil, reduce to a simmer.
  • Add cheese 1 cup or handful at a time. Stir constantly.
  • When cheese is fully melted, add in mustard, hot sauce, and Worcestershire sauce.
  • Transfer cheese to a preheated fondue pot.
  • In a large skillet, add 1/2 cup of beer and bring to a boil.
  • Add cauliflower and broccoli. Cook for 2-3 minutes or until they are the desired consistency.
  • Remove vegetables from pan, straining off liquid, and set aside.
  • Add sliced brats or knockwurst and cocktail sausages to the pan. Add an additional 1/2 cup of beer to the pan.
  • Cook sausage until all the liquid has evaporated and sausage is heated through.
  • Place toasted pretzel roll cubes, sausage, cauliflower, and broccoli on a serving platter.
  • Place mini pickles into a small bowl and serve alongside.
  • Dip cubes of bread, sausage, of vegetable into cheese fondue.
  • Place on plate and allow to cool slightly.
  • Eat and enjoy
