Ingredients

• 1 lb smoked sausage, halved legthwise and cut into 1/2-inch slices (i used andouille sausage)
• 4 c boiling potatoes, cut up (i used fingerlings)
• 1/2 c sweet peppers, chopped
• 3/4 c red onion, chopped
• 2 large celery stalks, chopped
• 2 c sauerkraut, rinsed and drained
• 2 Tbsp stone ground mustard
• 3 14-ounce cans chicken broth
• 2 large bay leaves
• pepper to taste

Directions

• 1In a 4-to 5-quart slow cooker combine sausage, vegetables, and seasonings. Pour broth over all. 2Cover and cook on low-heat setting for 7-9 hours or high-heat setting 3-1/2 to 4-1/2 hours, or until potatoes desired tenderness. 3Enjoy!
