A delicious time-tested, whole wheat pancake recipe!

Ingredients

  • 1 cup whole wheat flour (I use soft white whole wheat, but any kind will work)
  • 1 cup milk (or milk substitute)
  • 1 egg
  • 2 tablespoons sugar (or honey)
  • 2 tablespoons oil
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Directions

  • Heat griddle on medium-high to high (approx. 400 degrees). Combine all ingredients and mix well. Scoop by 1/4 cup scoops onto hot griddle, (do not spread out the batter on the griddle, allow it to spread by itself). Flip when batter starts to bubble on one side. Serve warm with butter and real maple syrup, or homemade whipped cream and fruit.
