Ingredients

  • 1 1/2 pounds chicken breast fillets (about 4 fillets) cut lengthwise into 12 strips
  • 1/2 cup lite soy sauce, optional Tamari
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 1 teaspoon balsamic vinegar
  • 2 cloves garlic, minced
  • 2 teaspoons freshly grated ginger
  • 2 teaspoons red pepper flakes
  • 1/2 cup natural peanut butter, creamy or crunchy
  • 1 tablespoon honey
  • 2 tablespoons lite soy sauce, optional Tamari
  • 2 teaspoons freshly grated ginger
  • 2 tablespoons freshly squeezed lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup water
  • 12 small (6 inch) skewers

Directions

  • Whisk together soy sauce, sesame oil, honey, vinegar, garlic, minced ginger, and red pepper flakes. Place chicken strips in marinade, cover, refrigerate, and let sit overnight or at least 5 hours.
  • Peanut Sauce: Add all ingredients to a food processor or blender and pluse until smooth. Add additional water if a thinner consistency is desired. Pour sauce into a glass dish or jar, cover and refrigerate until ready to serve.
  • Thread skewers with marinated chicken strips and refrigerate while heating the remaining marinate. Pour the remaining marinate into a small sauce pan, bring to a boil, reduce heat and simmer until thickened.
  • Lightly oil grates of grill, grill pan, or skillet with canola or coconut oil, and turn to medium-high heat. Once hot, add skewers and cook for about 3-4 minutes per side, or until chicken is cooked through and lightly browned, basting with the marinade as it cooks.
