Meatless Monday eats : grilled portobello mushroom steaks with an apricot and mango salsa.

Ingredients

  • For the portobello mushroom steaks:
  • 4 large portobello mushrooms
  • Olive oil
  • Salt
  • For the apricot mango salsa:
  • 4 apricots, de-stoned and finely chopped
  • 1 large sweet mango, peeled, de-stoned and finely chopped
  • 2 spring onions, finely chopped
  • 1 handful of chopped coriander
  • Juice of ½ a lime
  • 0.25 tsp of chopped jalapeño

Directions

  • For the portobello mushroom steaks:
  • Clean the mushrooms with a damp cloth or brush and remove their stems.
  • Then brush both sides of the mushrooms with olive oil so that the mushrooms soak up some oil and season with salt. Let the mushrooms rest for 10 mins before cooking.
  • Preheat the grill to high and cook the mushrooms for about 4-5 minutes on each side till tender.
  • For the apricot and mango salsa:
  • Make the apricot and mango salsa by mixing all the ingredients together, taste add extra lime or salt if needed.
  • Serve the grilled mushrooms with some salad greens and the apricot and mango salsa.
