Ingredients

• 6 eggs
• 1½ cups chopped ham
• 1 cup shredded cheddar cheese
• ¼ cup diced red pepper
• ½ cup diced yellow onion
• 2 cups chopped spinach
• 1 teaspoon salt
• ¼ teaspoon black pepper
• 2 Sheets Pepperidge Farm® Puff Pastry

Directions

• Preheat oven to 350 degrees and grease 12 muffin cup tin with cooking spray.
• Unfold Puff Pastry Sheets and cut each sheet into 9 squares. (You will have 6 extra squares).
• Stretch squares on all sides with your hands and tuck into each muffin cup, letting the edges be out of the cup.
• Whisk together eggs, ham, cheese, red pepper, onion, spinach, salt, and black pepper.
• Scoop ¼ cup of egg mixture into each muffin cup and back for 20 minutes.
• Serve!
