A simple, easy, tasty moist and delicious fruity bread! Yummy served hot, warm, or cold.

Ingredients

  • 1 cup of softened butter
  • 2 cups sugar
  • 4 eggs
  • 1 cup mashed ripe banana
  • 4 cups flour
  • 3/4 teaspoon salt
  • 1 20 ounce can crushed pineapple, undrained
  • 1 cup flaked coconut

Directions

  • Beat the butter with an electric mixer until light and fluffy. Gradually beat in the sugar until light. Add eggs; beat well. Stir in mashed banana. Combine the flour and salt. Add to butter mixture, mixing just until smooth. Fold in pineapple and coconut. Spoon batter into 2 greased and floured 9 x 5 inch loaf pans. Bake in a preheated 350 degree oven until a toothpick inserted in the center comes out clean. Bake about 60 - 70 minutes.
