Ingredients

  • 1 cup raw whole almonds
  • 1 cup medjuol dates (about 10 large), pitted
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons chia seeds
  • 3 tablespoons almond butter (or any nut butter)
  • 1 tablespoon coconut oil, melted
  • Optional: 8 ounces semi-sweet or bittersweet chocolate

Directions

  • Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • Place the dates, cocoa powder, almonds, almond butter, chia seeds and coconut oil into the food processor. Blend/pulse together until a moist dough forms. This takes about a minute or two. If the dough is too crumbly, add an additional 1 Tablespoon of coconut oil.
  • Once dough is formed, scoop out 1 Tablespoon of dough. Roll into a smooth ball and place onto prepared baking sheet. Repeat with remaining dough. Place in the refrigerator as you melt the chocolate in the below step. (Placing in the refrigerator during this step is not required, however, I think it helps when they are more firm for dipping in chocolate.)
  • Melt the chocolate: place the chocolate in a medium microwave-safe bowl. Melt in 30-second increments, stirring after each until completely melted and smooth. Let the chocolate sit for a few minutes to cool slightly before dipping.
  • Dip each ball completely into the chocolate using a fork or dipping tool (see above.) When lifting it out of the chocolate, gently tap the tool gently on the side of the bowl to allow excess chocolate to drop off. Place each back onto the baking sheet and refrigerator until the chocolate is set, about 25-30 minutes.
  • Dipping the truffles in chocolate is completely optional. With: 110 calories. Without: 65 calories. The choice is yours.
