Healthy Lemon Bars recipe made with a healthy almond flour crust. Less than half the sugar and butter compared to traditional lemon bar recipes. {Gluten-Free, Dairy-Free, Low-Sugar}

Ingredients

  • 1 1/2 cup almond flour **
  • 3/4 cup gluten-free baking flour
  • 1/4 cup powdered sugar
  • 1/2 cup butter or dairy-free butter substitute, melted
  • 4 eggs
  • 3/4 cup cane sugar
  • 1/3 cup fresh lemon juice (apprx 2 lemons)
  • 1/2 teaspoon baking powder
  • 1/3 cup gluten-free baking flour
  • 3 Tablespoons powdered sugar

Directions

  • Preheat oven to 350 degrees F
  • Prepare 9x13 pan by greasing with cooking spray.
  • In a small bowl, mix together almond flour, baking flour, powdered sugar, melted butter. Use your hands to mix together, until it is well combined and creates a dough.
  • Push dough into bottom of greased pan.
  • Bake for 18-20 minutes.
  • Mix eggs, sugar, lemon juice, baking powder, flour in blender. Blend for 5 seconds, scrap sides and blend 5 seconds more.
  • Pour filling mixture over baked crust.
  • Bake for another 20-25 minutes.
  • Sprinkle option powdered sugar over bars.
  • Wait 10-15 minutes before slicing.
