Ingredients

• 1/2 Cup Old Fashioned Oats
• 1 Overly Ripe Banana
• 3/4 Cup Creamy Peanut Butter
• 2 Tablespoons Honey
• 1 Egg
• 1/4 Cup Low-Sodium Chicken Broth
• 2 Cups Whole Wheat Flour
• 1 Tablespoon Baking Powder
• Additional Whole Wheat Flour for Rolling Out Dough

Directions

• Preheat oven to 350 degrees.
• Place the oats into a food processor and process for 30 seconds; set aside.
• Mash the banana with a fork in a large mixing bowl.
• Add the peanut butter, honey, and egg; mix on medium speed for 1 minute.
• Add the chicken broth; mix on medium speed for 1 minute.
• Fold the flour and baking powder into the wet mixture with a silicone spatula.
• Divide the dough into thirds.
• With a flour-dusted rolling pin, roll the dough out to a thickness somewhere between 1/4-inch to a 1/2-inch on a well-floured surface. Cut the dough with shaped cookie cutters and place on a Silicone or parchment paper lined baking sheet.
• Bake for 10 to 12 minutes.
