I cant have barley, but buckwheat groats make a great substitute. I like the idea of giving the dried ingredients as a gift. It would be a very nutritious and satisfying meal that anyone would love. It would be very warming for this time of year. When it is cold out, you can never have too much soup.

I like the name friendship soup. Instead of canned tomatoes, Ill more likely use fresh tomatoes. Some finely chopped spinach should be good as an additional vegetable too. The combination of beef, split peas and lentils definitely makes this a high protein recipe! Ive never really liked macaroni as a soup ingredient so Im thinking potato would be an okay substitute.

Seems pretty starchy... Might just use the barley and leave out the rice and macaroni. Way too much starch! Just with the split peas or lentils it would probably have enough body. And 1/3 cup of beef bouillon granules? I do like the jar idea.

Yes, too starchy, and, with the beef bouillon, also probably too salty. The jar idea is the best part of this recipe. Putting the dry ingredients together ahead of time could help with time crunches later... but it needs more non-starchy vegetables added for better flavor.

Hi .. this is a super recipe to make ahead and store for those nites when it just has to be soup ! One quick trick I use that I wanted to pass along is ... to avoid the separating macaroni from other ingredients .. just place the macaroni in a small baggie and tuck it into the top of the jar prior to closing. Easy and quick ! Thanks for the recipe.

Directions

  • In a 1 ½ pint jar, layer the first seven ingredients in the order listed. Seal.   Remove pasta from the top of jar to be used later.   In a large pot, brown ground beef and drain.   Return cooked ground beef to the pot, add the water, tomatoes, and the remaining soup ingredients except the pasta.   Bring to a boil, reduce heat, cover and simmer for 45 minutes.   Add pasta and simmer for 20-25 minutes or until pasta, peas, lentils and barley are tender.
