Hot Chocolate-Marshmallow Chocolate Chip Cookies

  • 3 1/4 cups All-purpose flour
  • 1 cup American heritage chocolate chocolate drink mix
  • 1 1/4 tsp Baking soda
  • 2/3 cups Brown sugar, light packed
  • 1 cup Milk chocolate chips
  • 1 1/4 tsp Salt
  • 1 cup Semi-sweet chocolate chips
  • 1 tsp Vanilla
  • 1 cup White sugar

  • 1 cup Butter, unsalted

  • 1 1/2 cups Marshmallows, mini frozen

Directions

• In a mixing bowl, cream butter and sugars until smooth. Beat in eggs and vanilla until combined.
• In a separate bowl, whisk together the flour, chocolate drink mix, salt and baking soda. Slowly add the flour mixture to the wet mixture, making sure all ingredients are incorporated.
• Fold in the milk chocolate and semi-sweet chocolate chips. Cover and chill the dough for an hour or so to allow the ingredients to blend well together and achieve a thicker dough.
• Preheat oven to 350 degrees.
• Use a small cookie scoop to make balls of dough. If you dont have one, take about 1½ tablespoons to make each ball of dough, and place onto baking sheets lined with parchment paper. Place dough balls 2 inches apart to allow space for rising.
• Take about 5 mini-marshmallows and tuck them inside the cookie dough balls. I found that doing this (instead of folding them in to the cookie dough) will prevent your cookies from sticking to the pan with the melted marshmallows.
• Bake for 10-12 minutes or until edges are golden brown. Mine was perfect at 10 minutes!
• Let the cookies cool for 5 minutes before removing from pan.
