  • Baking & Spices

    • 1 tsp Chili powder
    • 1/4 tsp Pepper, ground
    • 1/4 tsp Salt

    • 1 tsp Cumin, ground

    • 1 Can Also sub seitan
    • 1/2 package Butler soy curls

Frozen Hatch Green Chiles make this Vegan Green Chile Stew a snap - especially when you make it in an Instant Pot. So full of flavor! Pass the tortillas!

Ingredients

  • ½ package of Butler Soy Curls, rehydrated
  • (Can also sub Seitan, 1 tube GimmeLean Sausage, or 16oz Portabello Mushrooms
  • 1 tsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 Yellow Onion, diced
  • 2 Carrots, diced
  • 2 Stalks Celery, diced
  • 4-5 Cloves Garlic
  • 2 Cups Vegetable Broth
  • 2 Cups Water
  • 1 tsp Oregano
  • 1 cup dried, rinsed, Pinto Beans
  • 3 Yukon Gold Potatoes, cubed
  • 15oz Can Fire Roasted Tomatoes
  • 24oz package Select New Mexico Green Chiles
  • ¼ cup Lime Juice
  • ¼ tsp Salt
  • ¼ tsp Ground Pepper

Directions

  • Sauce your meat of choice using the SAUTE MODE and LESS setting of your IP.
  • Add the Garlic Pwdr, Onion Pwdr, Chili Pwdr, & Cumin and stir frequently until lightly browned
  • Use a little veggie broth to keep it from sticking
  • Remove from pot and set aside
  • Saute onion, carrots, and celery on SAUTE MODE and LESS setting until soft and translucent
  • Use Veg Broth as needed to keep from sticking
  • Be sure and scrape up any browned bits on bottom of pot as these add to the flavor
  • Add minced garlic and stir for 1 minute
  • Turn OFF IP
  • Add Veggie Broth, Water, Oregano, and dried Beans
  • Attach lid, set to SEALING, and select MANUAL mode for 30 minutes
  • After time is up, allow to vent naturally for 10 minutes and then use quick release
  • Stir broth and add potatoes, chiles, tomatoes, and the meat you set aside
  • Attach lid, set to SEALING, select MANUAL mode and 8 minutes
  • After time is up, allow to vent naturally for 5 minutes then quick release
  • Stir in Lime Juice
  • Stir in Masa Flour - 1 Tbs at a time, until desired thickness - up to 3 Tbs
