  • Canned Goods

    • 1/2 cup Coconut milk, canned
  • Condiments

    • 4 tbsp Maple syrup
  • Baking & Spices

    • 1/2 tsp Cinnamon
    • 1/2 cup Cornmeal, yellow
    • 1/4 tsp Nutmeg
    • 1/4 tsp Salt
    • 1 tsp Vanilla
  • Liquids

    • 2 cup Water

  • 1/2 C yellow cornmeal
  • 2 C water
  • 1/4 tsp. salt
  • 1/2 C canned coconut milk
  • 1 tsp vanilla
  • 1/2 tsp of cinnamon
  • 1/4 tsp of nutmeg
  • 4 Tbsp. Maple syrup, honey or agave for sweetening ( Add more or less as you like)
  • Fruit for topping (optional) I used fresh mango and some shredded coconut.

Directions

  • Place water, cornmeal and salt in a medium pot. Bring to a boil, stirring constantly.
  • Reduce heat and let simmer for 5 minutes stirring constantly.
  • Mix in coconut milk, cinnamon, vanilla and nutmeg. Cook for about 1 minute longer.
  • Stir in maple syrup or other sweetener to taste.
  • Serve with fresh fruit on top.
