Japanese Mash Potato Salad

• Produce

  • 1 Apple, large
  • 1 Carrots, medium slices thin
  • 1 Japanese cucumber, medium slices thin
  • 4 Potato, large
  • 2 Sweet potatoes, medium

• Condiments

  • 1 cup Japanese mayo

• Baking & Spices

  • 1 pinch Salt and pepper

  • 1/2 c raisings

Ingredients

• 4 large potato
• 2 medium sweet potatoes (optional)
• 1 large apple
• 1/2 c raisings
• 1 medium carrots (thin slices)
• 1 medium japanese cucumber (thin slices)
• 1 c japanese mayo
• 1 pinch salt and pepper

Directions

• 1Peel the potatoes and cut into smaller pieces. Boil a pot of water, add 1 t salt and boil the potatoes until soft. Drain and mash. Let cool. 2Peel and dice apple into small cubes. Use a mandoline to slice the cucumber thinly. 3Wash the raisins (because they can be gritty) and pat dry on tea towels. 4Cut carrot into thin slices, cook in boiling water until soft-firm. Drain and let it cool. 5Mix everything together with enough mayo, salt and pepper. Chill well before serving.
