Lemony Crab Rolls

Ingredients

• 1/2 c. mayonnaise
• 2 tsp. lemon zest
• Juice of 1 lemon
• 1 1/2 tsp. Old Bay seasoning, plus more for garnish
• 1/4 c. green onions, thinly sliced
• kosher salt
• Freshly ground black pepper
• 1 lb. lump crab meat
• 4 top-split buns
• 2 tbsp. butter, melted
• 4 leaves Bibb lettuce
• Lemon wedges, for serving

Directions

• In medium bowl, whisk together mayonnaise, lemon zest and juice, Old Bay, green onions, salt and pepper, then gently fold in crab meat until just combined.Heat large nonstick skillet over medium-high heat. Brush sides of buns with melted butter and cook until golden, about 2 minutes per side.Line each roll with 1 leaf Bibb lettuce and spoon in crab mixture. Sprinkle with Old Bay seasoning and serve with lemon wedges.
