I made this cocktail after being introduced to limoncello a couple years ago. You can substitute rosemary or basil for thyme as rosemary pairs well with limon flavors and basil pairs well with gin.
We dont have a grill, so just used fresh thyme. It was still good!
This drink is amazing. Its like lemonade for grownups. Im not much of a drinker, but here I was in the middle of the afternoon at work, craving it. My husband made this for me. The first time he used a dried spring of thyme. Bad idea. If anyone is considering substituting with dried thyme ... just dont. The second time he made it (which was right after, since I complained about having to spit up nasty bits of dried herbs), he used fresh thyme, but did not grill it. It was awesome! Except two of those pack quite the punch. I made the drink again, on my own this time, and skipped the thyme entirely. Im not sure if it was the lack of thyme or my sloppiness with the measuring, but it tasted a little too ginny. So for those who arent especially fond of gin, when made right the drink barely taste of gin. You mostly taste the citrus with a hint of gin in the background.
The Limoncello and the gin parts of this cocktail are just fine - especially if you like gin. However, the thyme seemed just silly. After picking out the charred bits of leaves, I went out into my herb garden and picked a few sprigs of lemon thyme, crushed them a bit in my hand and stuck them in the drinks. Much better!
A hit with our guests! The thyme adds a great new dimension to the drink.
This cocktail is now one of my favorites. I did not add the thyme because I did not have it. Will try it next time to see how it changes the flavor. I added a little more lime then what was called for. This is not a sweet drink at all. This drink is for those that like martinis and gin.
