We took this holiday favorite one step further and made it healthy with good fats and a protein boost! Low Carb Peppermint Protein Fudge Yep, you read that right. This fudge is low carb (only 3g of carbs) and delivers 4g of protein per bite. Not too shabby for dessert! Thanks to IdealLean chocolate brownie protein, we were able to cut the sugars and carbs in this recipe! Most traditional fudge is filled with processed sugar and unhealthy fats. Not this recipe! We replaced all that sugar with healthy fats and sweetened it with just a bit of honey. This is a super easy recipe to make too. Simply melt all the ingredients, let it set, and you’re ready to eat! Coconut oil is considered a healthy saturated fat because of its medium chain triglycerides. This means that coconut oil: Is easier to digest, putting less strain on the digestive system. Are primarily used as a source of energy rather than stored as fat. Encourages normal platelet function, improving heart health. Almond butter is full of healthy monounsaturated fats as well as fiber, vitamins, and minerals. Ingredients

  • 1/2 c coconut oil
  • 2 tbsp. cocoa powder
  • 1/2 c unsalted almond butter
  • 2 tbsp. honey
  • 1 scoop chocolate brownie IdealLean protein
  • 3/4 tsp. peppermint extract
  • dash of salt

Directions

  • Line a loaf pan with parchment paper and set aside.
  • In a small sauce pan, combine coconut oil, cocoa powder, almond butter, honey, and salt.
  • Heat over medium heat and whisk until smooth. It does not need to boil, just melt all the ingredients together.
  • Remove from the stove and whisk in the protein and extract until smooth. Pour into prepared pan. Place in fridge and let it set for at least 2 hours.
  • Allow the fudge to sit on the counter for 15 minutes before cutting and serving.
  • Store in fridge or freezer until ready to serve. Cut fudge into 14 equal pieces
  • Optional: sprinkle fudge with peppermint candy shavings for an added festive touch.
