An easy, make-ahead breakfast, these Matcha Overnight Oats are a meal that will keep you full for hours.

Ingredients

  • 3 TBS steel cut oats*
  • 1 TBS chia seeds
  • 14g vanilla protein powder* (I used 1 scoop Teras Whey Vanilla, 2 scoops=28g)
  • 1 tsp matcha powder
  • 3 TBS greek yogurt* (I used 2% plain)
  • ¼ cup unsweetened non-dairy milk
  • optional toppings:
  • unsweetened flaked coconut
  • fresh fruit
  • granola (I used this paleo one by Blissful Eats, highly recommend!)
  • nut butter

Directions

  • In an 8oz jar (or larger), combine all of your ingredients from steel cut oats to milk, and stir well until thoroughly mixed. Seal jar with lid and allow to thicken overnight, or at least 6 hours, until liquid is absorbed.
  • Add desired toppings and enjoy straight from the jar!
