Mediterranean Couscous Salad with Feta Cheese

  • 2 Lemon
  • 1 Lemon, Zest of
  • 12 Mint, leaves
  • 2 cups Parsley, fresh

  • 1 10oz packet Couscous

• Baking & Spices

  • 1 Salt

• Oils & Vinegars

  • 4 tbsp Olive oil, Extra Virgin

• Dairy

  • 6 oz Feta cheese

• Other

  • 1 pint Grapetomatoes

Directions

• Cook Couscous as per package directions.
• Stir in olive oil, lemon juice, lemon zest, cherry tomatoes, cucumber, feta cheese, parsley and mint.
• Season with salt and serve chilled
