Microwave Red Velvet Lava Cakes

Ingredients

• 1 box (18.25 ounces) red velvet cake + the ingredients on the back of the box
• 1/2 cup semi-sweet chocolate chips
• 1/4 cup heavy whipping cream
• Whipped cream

Directions

• Mix up the red velvet cake batter according to the directions on the box. 
• Then make the ganache.  For the ganache, place the chocolate chips into a medium sized bowl. In a small saucepan, pour the cream in and bring it to a boil. As soon as the cream boils up to the top of the pan, quickly remove it from the heat and pour it over the chocolate chips.  Whisk the cream and chocolate chips together until combined and the chocolate chips are fully melted.  
• Fill the jar or whatever microwaveable safe container you decide to use slightly less than half way with red velvet cake batter.  Put 2 tablespoons of ganache in the center of the batter pushing it into the batter, without mixing it in with the batter.  Then put enough extra batter in to cover the ganache. 
• Microwave one at a time for 90 seconds or until done.  If it starts overflowing, stop the microwave until it goes down, then continue again.  Top with whipped cream and eat right away.  
• If desired, you can refrigerate the remaining batter and ganache to make another time.
