Ingredients

  • 1 cup flour
  • 1/2 cup (1 stick) butter
  • 1/4 cup powdered sugar
  • 1 cup sugar
  • 2 tablespoons flour
  • 2 eggs, beaten
  • 1/2 teaspoon baking powder
  • dash of salt
  • 2 tablespoons lemon juice
  • 1 teaspoon emon zest
  • Confectioners sugar for dusting

Directions

  • Preheat oven to 350° F. Line an 8x8 baking pan with parchment paper and spray with nonstick cooking spray.
  • In the bowl of a stand mixer, combine the flour, butter and confectioners sugar with a mixer until combined (about 2-3 minutes). Press mixture into the prepared pan. Bake 20 minutes, or until light brown and fragrant.
  • Using a mixer, combine the eggs, sugar, flour, baking powder, lemon juice and zest in a large bowl. Beat until frothy.
  • Pour lemon filling over the crust (its okay if its still warm). Bake 25 minutes longer or until light golden. Cool in the pan on a wire rack. Dust with confectioners sugar and cut into 1 1/2-inch squares. Store in an airtight container at room temperature.
