    • 1/4 tsp Nutmeg
    • 1/4 tsp Salt
    • 2 tsp Vanilla
  • Oils & Vinegars

    • 2 tbsp Coconut oil
  • Nuts & Seeds

    • 1/2 cup Coconut flakes, Unsweetened

Ingredients

  • ⅓ cup peanut butter
  • 2 tbsp maple syrup
  • ¼ cup coconut sugar
  • 1.5 cup unsweetened applesauce
  • 2 tbsp coconut oil
  • ¼ cup almond milk
  • 1 tbsp Bobs Red Mill Egg Replacer + 2 tbsp water, let sit for 1 minute to thicken
  • 2 tsp vanilla
  • 1.5 cups Bobs Red Mill 1-1 Gluten-Free Flour
  • ½ cup unsweetened coconut flakes
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 small apple, cored and chopped
  • ¼ cup walnuts or peanuts, chopped

Directions

  • Preheat oven to 350 degrees and line a loaf pan with parchment paper or cooking spray.
  • Combine all dry ingredients in a large bowl and combine all wet ingredients in medium bowl.
  • Add wet ingredients to dry ingredients and mix until just combined. Fold in apples and walnuts.
  • Pour mixture into loaf pan and bake at 350 for 55 minutes. Cool for about 20 mins before slicing and serving.
  • Serves: 1 loaf
