Ingredients

  • ½ cup extra virgin olive oil
  • ½ cup coconut oil, melted
  • ⅓ cup unsweetened applesauce
  • ⅓ cup unsweetened almond milk
  • 1 tablespoon vanilla extract
  • ¼ teaspoon ground nutmeg
  • 2 eggs
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup brown sugar
  • 2 cups whole wheat pastry flour
  • 2 cups rolled oats (old fashioned oats)
  • 10 oz chocolate chips

Directions

  • Cream together olive oil, melted coconut oil, brown sugar, vanilla extract, almond milk, and applesauce
  • Add eggs and beat well
  • In a separate bowl, whisk together nutmeg, salt, flour, baking powder, and baking soda
  • Add the dry mixture to the wet, beating until combined
  • Stir or beat in oats and chocolate chips
  • Fill muffin liners ¾ of the way full with batter
  • Bake at 350 degrees for 19-22 minutes, or until a toothpick inserted comes out clean (mine were perfect at 20 minutes)
  • Serves: 24 muffins
