Chewy oatmeal cookie and creamy chocolate come together in these Oatmeal Fudge Bars. So easy to make, and so much better than the Starbucks version!

Directions

  • Preheat the oven to 350F degrees. Line an 8x8 inch square baking pan with aluminium foil leaving an overhang on each side and grease the lined pan with butter or non-stick cooking spray. Set aside.
  • Make the Oatmeal Layers. In a large microwave safe bowl melt the butter in short 30 second bursts. Allow to sit for a minute or two so the butter isnt too hot (otherwise youll scramble the egg). Stir in the sugars, followed by the vanilla and egg using a large wooden spoon or rubber spatula. Once the egg is fully combined - stir in the flour, salt & cinnamon. Fold in the oatmeal.
  • Spoon about three quarters of the mixture into the bottom of your prepared pan to create an even layer of oatmeal cookie mixture that covers the entire bottom of the pan. Set the remaining oatmeal mixture aside.
  • Make the Chocolate Fudge. In a medium sauce pan over low heat melt together the chocolate chips, sweetened-condensed milk and 2 tablespoons unsalted butter. Stir occasionally to make sure nothing burns. Once the mixture is a smooth consistency and everything is melted together, remove the pan from the heat and carefully pour the chocolate mixture over the oatmeal cookie layer so that the oatmeal cookie is entirely covered with chocolate fudge.
  • With the remaining oatmeal mixture, drop tablespoons sized amounts over the chocolate fudge so that some fudge is showing.
  • Bake in the preheated oven for about 25 minutes. The pieces of oatmeal cookie on the top should look almost set when you remove the pan from the oven. Cooking the bars for longer will result in crispier, less chewy bars.
  • Allow the bars to cool fully and then cut into bars.
