Directions

  • Preheat oven to 350 degrees F. Line a muffin tin with 9 cupcake liners.
  • In a large bowl whisk together the coconut flour, ground cinnamon, ground nutmeg, baking soda and salt.
  • In another mixing bowl whisk together the eggs, coconut oil, honey and vanilla extract. Add the wet ingredients to they dry. Mix with a wooden spoon until ingredients are well combined and a smooth batter forms. Fold in the apple chunks.
  • Spoon the batter into the muffin tin, dividing equally between the 9 cupcake liners.
  • Bake in the oven for 35-40 minutes, until a toothpick comes out clean.
  • Remove from the muffin tin and cool on a wire rack.
