Ingredients

  • 2 cups plantain chips
  • 1 lb grass fed ground beef
  • 1 teaspoon sea salt
  • 1 teaspoon ground pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 Tablespoons cumin
  • 1 cup goat cheese, shredded
  • 1/2 avocado or 1/2 cup guacamole
  • Salsa, optional

Directions

  • Brown the ground beef in a cast iron skillet, using a spoon to break up the meat while cooking. When about halfway done (half pink/half brown), add all the seasonings. Cook, stirring occasionally until the meat is brown. On an oven safe platter, place the plantain chips, and top with cooked meat and shredded goat cheese. Place platter in the oven on low broil until cheese is melted. Serve hot with guacamole or salsa for dipping.
