Ingredients

    • 1 Bacon
    • 1 lb Ground pork
    • 1/2 tsp Poultry seasoning

    • 1/2 tsp Thyme, fresh

    • 1 Egg white
    • 1 Eggs, Fried or scrambled
  • Condiments

    • 8 tsp Maple syrup, pure
    • 1 Maple syrup
  • Baking & Spices

    • 2 tbsp Baking powder
    • 1 tbsp Baking soda
    • 1/2 tsp Black pepper, fresh ground
    • 1/2 tsp Fennel or fennel seed, ground
    • 1/4 tsp Nutmeg, fresh ground
    • 3 1/2 tsp Salt
    • 1/2 cup Sugar
    • 6 cups Whole wheat flour, white
  • Oils & Vinegars

    • 1 tbsp Canola or vegetable oil
  • Dairy

    • 1 Cheese
    • 1 cup Milk

Makes 8 sandwiches

Ingredients

  • 1 lb. ground pork
  • 1 egg white
  • ½ t. chopped fresh thyme
  • ½ t. ground fennel or fennel seed crushed
  • ½ t. minced onion
  • 1½ t. salt
  • ¼ t. fresh ground nutmeg
  • ½ t. poultry seasoning
  • 2 t. pure maple syrup
  • ½ t. fresh ground black pepper
  • 6 cups white whole wheat flour
  • ½ c. sugar
  • 2 T. baking powder
  • 1 T. baking soda
  • 2 t. salt
  • 1 c. milk
  • 1 egg
  • 1 T. canola or vegetable oil
  • 2 T. pure maple syrup
  • Maple syrup for serving
  • Fried or scrambled eggs
  • Cheese
  • Bacon

Directions

  • Add all the ingredients for the Maple Sausage into a bowl and mix well.
  • Refrigerate for 15 minutes.
  • Heat a large skillet over medium-high heat and coat with cooking spray.
  • Form the pork mixture into 8 round patties and add to the skillet.
  • Cook for 3-4 minutes per side until no longer pink in the middle.
  • Remove to a plate to cool.
  • Mix the dry ingredients for the pancakes into a large container.
  • Scoop out 1 cup of the mix into a large bowl.
  • Add the milk, egg, canola oil and maple syrup to the 1 cup of dry ingredients and mix until just combined.
  • Wipe out the skillet that you used to cook the sausage in and spray again with cooking spray.
  • Heat over medium heat, then once hot add ¼ c. portions of the pancake mix to the skillet, as many as can fit, youll need 16 small pancakes total.
  • When they start to bubble after a couple of minutes, flip to the other side and cook for another 2 minutes.
  • Remove to a plate to cool, then assemble your sandwiches.
  • Pour maple syrup over the sausage before adding your top pancake if desired.

  • Or you can serve it on the side for dipping.
