These parmesan prosciutto scones are packed full shredded parmesan, prosciutto, chives and lots of delicious butter. They are perfect for Christmas morning!

Ingredients

  • 2 cups all purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons sugar
  • 4 tablespoons Challenge Dairy unsalted cold butter, cut into cubes (more for slathering)
  • 1 cup shredded Parmesan cheese, more for topping
  • 1 cup chopped prosciutto (sliced 1/4 inch thick)
  • 1/4 cup diced chives
  • 3/4 cup - 1 cup heavy cream, more for topping

Directions

  • Preheat oven to 425 degrees and line a baking sheet with a silpat liner or parchment paper. In a large mixing bowl add flour, baking powder and sugar. Whisk to combine. Add cold butter to the flour mixture and using a pastry blender mix into the flour until the flour is crumbly with little pieces of butter still present in the dough. Stir in Parmesan cheese, prosciutto and chives. Add in 3/4 cup heavy cream and stir to combine. If the mixture doesnt fully come together add in a bit more cream until the dough fully comes together and is a bit sticky. Flour a large cutting board or your counter and turn out dough. Flour your hands and form the dough into a 6 inch disk and about 3/4 inch thick. Cut into 8 pieces and place onto prepared baking sheet. Brush the tops of the scones with additional heavy cream. Place into the oven and cook for 20-25 minutes or until golden brown. After 15 minutes remove from the oven, top with a small handful of shredded Parmesan cheese and add back to the oven. Continue baking until completely baked. Serve warm with lots of delicious butter.
