Ingredients

  • 1 cup gluten-free all purpose flour
  • 1/2 cup cocoa powder
  • 1/4 cup coconut sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 2 eggs, whisked
  • 2 medium bananas, mashed
  • 1/4 cup maple syrup
  • 1/2 cup strong brewed coffee or espresso, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 1/3 cup dairy-free mini chocolate chips
  • 2 candy canes, crushed

Directions

  • Preheat oven to 350 degrees. Grease a 9x5 loaf pan. In a bowl, mix together the eggs, banana, maple syrup and extract. Stir in the coffee. Add the flour, cocoa powder, coconut sugar, baking powder, baking soda and salt. Mix until no lumps remain. Spread batter into greased loaf pan. Sprinkle on chocolate chips and crushed candy canes. Bake bread for 50 minutes or until toothpick comes out clean. Let cool before slicing.
