  • For the Broccoli:2 pounds broccoli or broccolini, ends trimmed2 tablespoons olive oil2 cloves garlic, minced1/2 or 1 teaspoon red pepper flakes (depending on your spice tolerance)Kosher salt and freshly cracked black pepperFor the Pesto Vinaigrette:1 shallot, roughly chopped1 clove garlic1 cup tightly packed basil1-2 tablespoons red wine vinegar1/3 cup olive oil

Directions

  • For the Broccolini:Heat the olive oil in a large skillet over medium heat. Add the broccolini and sauté for 3-4 minutes. Add the garlic and red pepper flakes and stir to combine. Continue to sauté for another 3-4 minutes more until the broccolini is just tender. Season with salt and pepper and toss with the pesto vinaigrette before serving.For the Pesto Vinaigrette:Combine all the ingredients in a high powered blender and blend for 2 minutes until evenly combined. Season with salt and pepper and set aside.
