Ingredients

bread
butter, softened
classic basil pesto
grated mozzarella cheese
sliced garden tomatoes

Directions

Completely butter one side of each slice of bread.
Then spread pesto on the opposite side of each slice.
Next heat pan or griddle over medium heat.
Place one slice of bread on the griddle buttered side down.
Next layer with fresh grated mozzarella, garden sliced tomatoes, and top with a little more cheese.
Now add the remaining slice of bread, butter side up! Adjust heat as needed, and cook until golden brown, about 2-4 minutes.
Then flip and cook until golden brown on the other side, about 2-4 minutes.
