Pork loin with a great herby stuffing

  • 1/2 Pork loin preferably the rib end, higher-welfare

• Produce

  • 3 cloves Garlic
  • 2 Red onions
  • 1 small handful Rosemary leaves picked, fresh
  • 1 small handful Sage leaves ripped up, fresh

• Condiments

  • 4 tbsp Balsamic vinegar

• Baking & Spices

  • 1 Black pepper, freshly ground
  • 3 heaped tbsp Fennel seeds
  • 1 Sea salt

• Oils & Vinegars

  • 1 Olive oil, Extra Virgin

• Nuts & Seeds

  • 1 handful Pine nuts

• Bread & Baked Goods

  • 500 g Sourdough or rustic bread
