This loaded breakfast casserole has crunchy tater tots, savory prosciutto, sharp cheddar, healthy avocado, and perfectly cooked eggs. Gluten free, mostly hands-free…perfect weekend breakfast!

Ingredients

  • 10 frozen Tater Tots (gluten free)
  • 2 slices Prosciutto Di Parma
  • 6 eggs
  • 1/4 cup Sharp Cheddar Cheese (grated)
  • 2 Green Onions (use green tops only, sliced)
  • 1/8 tsp Salt
  • Black Pepper
  • 1/2 Avocado (diced)

Directions

  • Preheat oven to 375°. Coat baking sheet and 10.5 x 7 baking dish with cooking spray.
  • On the baking sheet, bake TATER TOTS according to package instructions.
  • Meanwhile, prep other ingredients.
  • When TOTS are done, carefully remove them, cut each in half, and toss into prepared baking dish.
  • Tear PROSCIUTTO slices into smaller pieces and scatter over tater tots.
  • Break EGGS into a bowl; add WHITE CHEDDAR, ONIONS, SALT, and BLACK PEPPER; use a fork to gently break the yolks but no need to whip (this makes the pretty yellow and white colors); pour egg mixture over tater tots.
  • Scatter AVOCADO pieces throughout egg mixture.
  • Bake 12-15 minutes until eggs are cooked through; allow to cool a few minutes; serve warm.
