Description

Cottage cheese hidden in the batter makes these fluffy pancakes high in protein. Serving is 2 pancakes: 1 red, 1 yellow, 1 teaspoon

Ingredients

  • 1 egg white
  • 2 whole eggs
  • ¾ cup quick cook oats
  • 3 teaspoons raw honey
  • ½ cup cottage cheese
  • 1 teaspoon vanilla extract

Directions

  • Spray skillet with cooking spray and heat over medium high heat.
  • Put all your ingredients in a blender to blend until smooth
  • Pour into heated pan and cook until golden brown on both sides, about 3 minutes per side.
  • Serve with maple syrup or fruit!
