Healthy pumpkin protein squares that are easy to make and take on the go and to use for both pre or post workout snacks.

Ingredients

  • 1 Cup Oat Flour
  • 2 Scoops About Time Vanilla Whey Protein
  • ½ tsp Baking Soda
  • ¼ Cup Truvia (or stevia)
  • 1 TBS Pumpkin Pie Spice
  • 1 Cup Liquid Egg Whites
  • 8 oz Pumpkin Puree
  • ½ Cup Water

Directions

  • Preheat oven to 350 degrees.
  • Combine oat flour, vanilla whey protein, baking soda, Truvia, and pumpkin pie spice in a large mixing bowl.
  • Combine liquid egg whites, pumpkin puree, and water in a small mixing bowl.
  • Add wet ingredients to dry ingredients and mix together.
  • Spray an 8x8 inch oven safe glass baking dish with cooking spray and pour mixture into dish.
  • Bake for about 25 minutes or until knife comes out clean.
