Ingredients

  • 1/2 pound extra lean ground beef
  • 1/2 cup cooked black beans
  • 1 cup salsa
  • 2 cups long grain brown rice, cooked
  • 1/4 cup shredded low fat cheddar cheese
  • 1 tablespoon fresh cilantro, chopped (optional)

Directions

  • In a large nonstick skillet, cook ground beef until cooked through, breaking up the meat as you go. Drain off any excess fat.
  • Add beans and salsa. Allow to simmer until beans are hot.
  • Add cooked rice.
  • Simmer until mix thickens slightly as the moisture from the salsa cooks off.
  • Remove from the heat and toss in cheddar cheese.
  • Top with chopped cilantro, if desired.
  • Enjoy!
