Description

Soaking the cashews makes for a creamier, smoother filling, but you can skip this step if you didnt plan ahead. The tart can be left plain, or topped with little bits. Drop down to the bottom of the page in the notes section for more suggestions!

You can leave out the coffee if you prefer by simply doubling the cocoa powder amount.

Ingredients

  • 1 cup cacao or raw cacao powder
  • 1 cup full fat or light coconut milk
  • 1½ cup raw cashews, soaked for 1 - 2 hours
  • ¼ cup raw honey or 3 tablespoons maple syrup
  • 1 teaspoon vanilla
  • ½ teaspoon sea salt
  • cashew coffee crust {see below}
  • 1½ cups raw cashews
  • 1 tablespoon finely ground coffee
  • 2 teaspoons cocoa or cacao powder
  • ¼ teaspoon sea salt
  • 2 tablespoons coconut oil
  • ½ tablespoon maple syrup

Directions

  • Combine all of the ingredients in a food processor and blend until completely smooth.
  • This could take a few minutes, set aside when done.
  • Pour the filling into the crust and chill for one hour.
  • Serve chilled or at room temperature.
  • Combine all of the ingredients in a food processor and pulse until it is finely ground and starts to form a ball.
  • Press the crust mixture into the bottom of a tart pan or if you dont have a tart pan.
  • Fill as instructed above.
