  • 16 even-sized open cup mushrooms, stalks cut level
  • 3 tbsp olive or vegetable oil
  • 2 cloves garlic, minced
  • 3 tbsp unsalted butter, softened
  • 2 tbsp fresh thyme, chopped
  • 1/2 tsp garlic powder
  • 5 tbsp fresh breadcrumbs
  • 1 1/2 tbsp lemon juice
  • salt and freshly ground black pepper, to taste

Directions

  • Preheat oven to 400F. Meanwhile, heat the oil in a skillet and fry mushrooms, cap-side down, for 2-3 minutes over medium high. Arrange mushrooms in a casserole dish with the cups facing downwards. In a small bowl, mix together butter, garlic, thyme, lemon juice and garlic powder. Spoon a little garlicky mixture on each mushroom, and sprinkle with some breadcrumbs. Place into the oven and bake for 15 minutes or until golden brown.
