  • 1 lb spicy sausage
  • 2 medium sweet potatoes, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 carrots, peeled and sliced
  • 3 cloves garlic, minced
  • 3 Tbsp olive oil
  • 1 tsp thyme
  • 1 tsp basil
  • 1 tsp of red pepper flakes
  • salt and pepper, to taste

Directions

  • Preheat oven to 400 F.
  • In a large bowl combine the sliced sausage and chopped veggies. Add olive oil, garlic and sprinkle in all seasonings. Toss everything to coat.
  • Spread mixture on a foil lined baking sheet. Bake at 400 F for about 25 minutes, turning veggies and sausage halfway through. If the sweet potatoes are soft, its done.
  • Serve warm and enjoy the deliciousness!
