Sweet and salty cookies with a crunch!

Ingredients

  • 8 Medjool dates (soaked in water for 30 minutes)
  • 3/4 cup cashew butter (or nut butter of choice)
  • 1/2 tsp sea salt
  • 1 1/2 cups crispy rice cereal (I used Barbaras brown rice cereal)

Directions

  • Drain the dates and add them to a food processor with the cashew butter and sea salt. Blend until smooth.
  • Transfer to a bowl and mix in the crispy rice. The mixture will be thick.
  • Using a cookie scoop , drop cookies onto a lined baking sheet .
  • Place cookies in the freezer for 15 minutes to set.
  • Serves: 10-12
