Ingredients

  • 2 cups pumpkin puree
  • 1/2 cup  coconut oil
  • 2 1/2 cups gluten free rolled oats
  • 1 cup  pumpkin seeds
  • 1/2 cup  sunflower seeds
  • 1 tbsp nutmeg
  • 1 1/2 tbsp cinnamon
  • 4 - 5 tbsp  honey or maple syrup (depending on how sweet your pumpkin is)

Directions

  • Preheat oven to 175 ºC (350 ºF).
  • In a large mixing bowl add the pumpkin puree, followed by the coconut oil, honey, cinnamon and nutmeg and mix them all well.
  • Add the oats and seeds and continue to stir until all of the ingredients are well combined.
  • Transfer the dough to a gently greased rectangular baking dish. Press the mixture with your hands so that it is flat and evenly distributed.
  • Optional: Sprinkle a bit more pumpkin seeds on top and gently press so that they stick into the mixture.
  • Bake for about 20 minutes and then leave it to cool.
  • Once it reaches room temperature and its chilled, cut it into bars (about 4cm/1.5 inch wide).
  • Serves: 15 bars
