Slow Cooker Potato & Sausage Soup

  • 1 20 oz package Simply potatoes steakhouse

  • 6 cups Chicken broth

  • 1/2 cup Half and half

Ingredients

• 6 cups chicken broth
• 1 14 oz can creamed corn
• 1 20 oz package Simply Potatoes Steakhouse Seasoned Diced Potatoes
• 1/2 cup carrots, shredded
• 2 T olive oil
• 12 oz chicken sausage, sliced
• 1/2 cup onion, diced
• 2 cloves garlic, minced
• 1/2 cup half and half
• Optional: shredded cheese or sour cream for garnish

Directions

• Spray slow cooker with non-stick cooking spray. Add chicken broth and creamed corn, stir. Pour in package of Simply Potatoes and carrots.
• Pour olive oil into large non-stick pan. Cook chicken sausage until browned over medium heat. Add onion and garlic and cook an additional 2-3 minutes. Add to slow cooker.
• Stir all contents. Cook on low 6 hours or high 4 hours. Prior to last 1/2 hour of cook time stir in half and half.
• Serve with optional garnishes if desired.
