All the flavors of pumpkin pie, in a delicious breakfast oatmeal that cooks while you sleep!

Ingredients

  • 2 cups steel cut oats
  • 4 cups water
  • 2 cups milk
  • 1 (15 ounce) can of pumpkin puree (not pie filling)
  • 1 TBSP pumpkin pie spice
  • 1 TBSP pure vanilla extract
  • ½ tsp pinch of salt
  • ¼ - ½ C brown sugar

Directions

  • Place all the ingredients in a large slow cooker, stir, set to low and cook for 6-8 hours.
  • Stir the oatmeal mixture well and serve. Add additional add-ins for desired consistency (add milk), desired sweetness (add more brown sugar or pure maple syrup), and desired flavor (you could add in chopped pecans, raisins, dried cranberries, cinnamon, etc).
