Slow Cooker Sweet Chili Chicken

  • 4 Chicken breasts, large

  • 1 cup Chicken stock

  • 1/2 cup Chili sauce, sweet
  • 1/4 cup Soy sauce

• Baking & Spices

  • 2 tbsp Cornstarch
  • 1/4 tsp Salt

• Liquids

  • 1/4 cup Water

Ingredients

• 4 large chicken breasts
• ½ cup sweet chili sauce (my favorite brand)
• 1 cup chicken stock
• ¼ teaspoon salt
• ¼ cup soy sauce (I use reduced sodium)
• ¼ cup water
• 2 tablespoons cornstarch
• Cilantro

Directions

• Stir together the sweet chili sauce, chicken stock, salt and soy sauce in the base of a slow cooker.
• Add the chicken and cook on low for 2-3 hours.
• After 3 hours, stir together the water & cornstarch. Add to the slow cooker and stir.
• Turn the slow cooker to high and cook for 20-30 minutes until slightly thickened (keep an eye on it so it doesnt burn).
• Pull the chicken out of the slow cooker and shred using two forks.
• Pour as much sauce as youd like over the shredded chicken (I used just over half), and stir to coat.
• Garnish with cilantro.
