Crispy baked sweet potato fries that you can eat for breakfast! Theyre perfectly spices and topped with savory bacon, avocado, tomatoes, fried eggs and chives. Paleo & Whole30 friendly.

More than a little into running and paleo recipes (yoga now too!) but Im not here to rain on your grains (or anything else) so come along for the ride! I do a little too much of everything (except cleaning), and I enjoy laughing at myself. As long as Im the one making the jokes, that is. Just kidding. So bring me your angst, your appetite and your frying pan and climb aboard!

Ingredients

  • 2 medium sweet potatoes (any type), peeled (or scrubbed, optional) and cut into fry shapes.
  • Fine grain sea salt to taste
  • dash chipotle pepper
  • ¼ tsp smoked paprika
  • 2 tsp olive oil (or preferred fat for roasting)
  • 5-6 slices good quality bacon (sugar free for Whole30 compliant) - cooked until crisp, drained, and crumbled
  • 1 small ripe avocado or half of a larger one
  • ½ cup quartered cherry tomatoes
  • Fresh chives, chopped, for garnish
  • 2-3 eggs - one for each serving - cooked to preference
  • *Hot sauce - optional for extra spice and flavor

Directions

  • To make the fries, preheat your oven to 425 degrees and line a large baking sheet with parchment paper. In a large bowl, toss the cut sweet potatoes with the olive oil, salt, paprika, and chipotle pepper until evenly coated.
  • Arrange the sweet potatoes in a single layer on the baking sheet with enough room around each one (no touching) to ensure crispy fries.
  • Roast in the preheated oven for 20 minutes, flip (or shake the dish a bit) and continue to roast for another 15-20 minutes or until browned and crispy on the outside.
  • While the sweet potatoes are roasting, prepare the bacon and eggs. I like to fry my eggs in bacon fat sunny side up, but cook yours however you prefer.
  • When the fries are done, top with crumbled bacon, quartered cherry tomatoes, diced or sliced avocado, chopped fresh chives and cooked eggs. Drizzle with a bit of hot sauce if you choose. This will make 2-3 servings depending on how hungry you are! Enjoy any time of day!
