Spicy Andouille Sausage Tortellini Soup

• Meat

  • 1 12-oz package Andouille sausage

• Produce

  • 3 cloves Garlic
  • 2 cups Spinach, fresh
  • 1 14.5-ounce can Tomatoes
  • 1/2 cup White or yellow onion

• Canned Goods

  • 2 32-oz cartons Chicken broth, organic low sodium

• Pasta & Grains

  • 2 cups Cheese tortellini, fresh

• Baking & Spices

  • 1/2 tsp Black pepper, ground
  • 1 tbsp Italian seasoning blend, Dried
  • 1 tsp Paprika

• Oils & Vinegars

  • 1 tbsp Olive oil

Directions

• In a large pot, saute the onions and garlic until soft and clear
• Add sausage, and cook until slightly brown
• Add chicken stock, diced tomatoes, paprika, pepper and Italian seasoning, cover and simmer until hot
• Stir in tortellini, and cook until done
• Add chopped spinach right before serving, or serve on the side
